This a large wonderful tasting salad using a fine chop technique. This can be achieved by buying an inexpensive Alaskan Ula Knife or just using a favorite chef’s knife. The principle is chopping all the salad greens and toppings into relatively small pieces. This creates a delicious texture which compliments the dressing used.
This large salad incorporates many food groups such as vegetables, nuts, seeds, legumes and fruit. Not only delicious but very healthy. Have fun experimenting with different salad dressings. I will give you some but be creative on your own.
- Romaine, Kale, Boston Bibb, Spinach or any Greens you enjoy
- Grape or Cherry Tomatoes
- English Cucumbers
- Sweet Peppers
- Garbanzo Beans
- Toasted Pecans or Cashews
- Sunflower Seeds or Pumkin Seeds
- Kalamata Olives or Salad Olives
- Red Onion
- Feta Cheese (opt)
These are some ingredients I chose. Add or subtract to your liking.
- 1 cup soymilk
- 1 lg garlic clove
- 2/3 cup raw cashews
- 1/4 cup raisons
- 4 pitted olives
*Combine all ingredients in a blender and blend until smooth*
